Sometimes my users delete a document in a DB and after that they couldn´t remember that they have deleted it. So I would have the option to see which person deleted a document. Maybe in the DB Access log or somewhere else.

You could use "Trigger Happy" by Damien Katz to log deletions. Trigger Happy is available on OpenNTF.

don't we have soft-deletions for this ?

Since soft deletions save the entire document, they add a lot more overhead. It's not practical to soft-delete for a week or a month.

A deletion log makes sense if it could be enabled in the db properties, and if you can define how much history to keep (either within each db, or with a policy).

As an administrator, I would like to see deletions logged explicitly as such in the Database Properties - User Details. ie logged as a Delete event instead of a Write event (and while we're at it, the same in the Notes log)

I at least would like to see the deleting user in the deletion stub.
